Note: Although the example used is a Moodle quiz, this can be done in any activity that supports user or group overrides.
1. Within the quiz, click on the cog-wheel to the right and select User overrides.
2. Click on the "Add user override" button
3. Fill in the fields as required to override the quiz deaults. You must select a user.
4. Once done, you can save or Save and enter another override if you have more overrides to configure.
